Potato bomb

01 September 2012 - 01:24 AM

Here's a great way to enjoy a baked potato. Its called the potato bomb. Its very simple to make and tastes great.
Start off by getting some baking potatoes, preferably not wrapped in foil because they will have to be redone afterwards.
Take a apple coring tool and cut a hole right thru the potato out the other side and put aside the plug.

Cut the plug in half so you have 2 pieces.

Place one plug back in and start to stuff the potato with your favorite cold cuts, meats etc. I used pastrami as thats all I had available.

Then stuff the potato with minced garlic , cheese and plug the other end up.

Now take some good ol bacon strips and wrap the potato up.

Wrap the tin foil around the potato closing it up.

I put mine in the smoker for 4 hours at 250 degrees, but if you're using a bbq or oven, set the temperature at 375-400 degress for about 1.5 hours. Turn the potato about half way thru the cooking time to cook evenly,

When done, it should look like this.

Cut thru the middle length wise and scoop on sour cream or what ever you like and enjoy.

Oh yeah, doesn't hurt to have something accompany the potato like smoked St. Louis ribs either.
